What do you think of this recipe?
Jicama and Avocado Salad with Smoked Chili-Orange Vinaigrette
1/4 cup orange juice
2 tablespoons Smoked Chili Oil
1 teaspoon Safeway SELECTâ„¢ Dijon Mustard
1 teaspoon grated orange peel
6 cups rinsed and crisped romaine lettuce
1 cup thin slivers jicama
1 medium-size (about 1/2 pound) firm-ripe avocado, peeled, pitted, and sliced
Safeway Salt Steps
1. In a small bowl, whisk together orange juice, oil, mustard, and orange peel. Set aside.
2. Arrange lettuce in a large bowl. Top with jicama and avocado slices.
3. Pour dressing over salad. Mix gently and add salt to taste.
PER SERVING: 107 CAL., 76% (82 CAL.) FROM FAT; 1.7 G PROTEIN; 9 G FAT (1.4 G SAT.); 6.4 G CARBO (2.5 G FIBER); 27 MG SODIUM; 0 MG CHOL.
