I have discovered how to make zuchini and squash taste great using my WOK.
I've never been much of a vegetable guy, so perhaps you could use about any veggie. I have also used a broccoli/carrots medley in the WOK also.
- Chop up a zuchini and a squash into about 1"x 1/2" cubes.
- Set your WOK on high temp with a Tbsp of virgin olive oil, until HOT.
- Once hot, toss in your veggies. (I recommend a covered wok, as the oil can spatter on you when the food hits it; it starts cracklin)
- I also toss in a Tbsp of Smart Balance butter.
- Then add some seasoning (I have been adding a garlic & onion spice that I bought, and I use quite a bit).
- Stir them up every few minutes until they are getting dark/crispy looking on the edges. There is about a 5 minute window between the veggies being too hard, or turning into mush. I like mine closer to mush, but still have some sustinance to them.
Anyway, I think they are delicious. They go great with grilled fish or chicken. For those who dont like raw vegetables, a wok might be your new best friend!
