Roasted Scallops with Artichokes

 

1.25 lbs bay scallops

5 oz frozen artichoke hearts, thawed & chopped

¼ cup seasoned bread crumbs

¼ cup dry white wine

2 T fresh lemon juice

2 t olive oil

¼ t salt

¼ t pepper

fresh parsley, chopped

 

Preheat oven to 400 degrees.  Spray a 2 qt pyrex baking dish with nonstick spray.

 

In a medium bowl, combine all ingredients except the parsley.  Transfer to the baking dish.  Bake until lightly browned; about 20 minutes.  Remove from the oven and increase the temp to broil.  Drain off the liquid from the baking dish.  Return to oven and broil about 5 minutes until a deep gold color.

 

Sprinkle fresh parsley on top.

 

Makes 4 servings, 219 calories each.

I am having this again for dinner tonight.  It is really yum.  I don't have lemon juice in the house but I subbed in some fabulous lemon-infused olive oil instead of plain.  Very easy to make too, and difficult to mess up - which, considering my experience level with cooking, is a home run.  :grin:
